Method
 

Instructions
  1. Begin by placing the baby potatoes in a large pot of boiling salted water. Cook for about 10-15 minutes or until tender, then drain and set aside.
  2. In a medium skillet, melt 4 tablespoons of butter over medium heat. Once bubbling, add minced garlic and sauté for 1-2 minutes until fragrant.
  3. Carefully place the boiled potatoes into a large mixing bowl. Pour the garlic butter over and toss with salt and pepper to coat well.
  4. Preheat your oven to 400°F (200°C). Spread the coated potatoes on a baking sheet and roast for 20-25 minutes until golden-brown and crispy.
  5. Once out of the oven, sprinkle with fresh herbs if desired and let them rest for a few minutes before serving.
