  • 1 cup Bell Peppers (any color) Diced jalapeños can be used for extra kick.
  • 1 cup Cheddar Cheese Can substitute with Monterey Jack or pepper jack.
For Serving
  • 1 cup Creamy Avocado Ranch Dip Cilantro-lime crema is a delicious alternative.

Step-by-Step Instructions
  1. In a large mixing bowl, combine the cooked chicken, drained black beans, rinsed corn, and diced bell peppers. Add shredded cheddar cheese to create a creamy filling.
  2. Lay out an egg roll wrapper, pointing one corner toward you. Spoon about two tablespoons of the filling onto the center. Fold the bottom corner, then the sides, and roll tightly to seal.
  3. Preheat air fryer to 375°F (190°C) for about 5 minutes.
  4. Arrange the egg rolls in a single layer in the air fryer basket. Air fry at 375°F for 12-15 minutes, flipping halfway through.
  5. Remove the egg rolls and let them rest for about 5 minutes before slicing.
