- Bring a large pot of salted water to a boil. Add the orzo pasta and cook until al dente, about 8-10 minutes. Drain and set aside.
- Heat olive oil in a skillet over medium heat. Add sliced cremini mushrooms and chopped shallot; cook for 3-5 minutes until mushrooms are tender.
- Stir in minced garlic and fresh thyme; sauté for 1 minute until fragrant.
- Sprinkle flour over vegetables; cook for 1-2 minutes. Gradually whisk in vegetable broth. Let simmer, then stir in half and half and Parmesan until sauce thickens.
- Add cooked orzo and shredded spinach; stir well and cook for another 3 minutes until spinach wilts.
- Adjust seasoning with salt and pepper. Serve immediately, garnished with additional Parmesan if desired.
