Ingredients
  

For the Pasta
  • 8 oz Spaghetti use gluten-free pasta if preferred
For the Sauce
  • 1 can Cream of Chicken Soup 10.5 oz, can swap with cream of mushroom
  • 1 cup Sour Cream use reduced-fat for a lighter version
  • 1/2 cup Milk chicken broth can be used as an alternative
For the Protein
  • Cooked Chicken rotisserie chicken is a time-saver
For the Vegetables
  • 1/2 cup Onion chopped, yellow or white onions work best
  • 1/2 cup Bell Pepper chopped, any variety suits your taste
For the Seasoning
  • 1/2 teaspoon Garlic Powder or use fresh garlic
  • 1/2 teaspoon Onion Powder
  • Salt and Pepper to taste
For the Cheese
  • 1/2 cup Cheddar Cheese shredded, can substitute with Colby Jack
  • 1 cup Monterey Jack Cheese shredded, mozzarella is a great alternative
For the Garnish
  • Fresh Parsley optional for garnish

Method
 

Cooking Instructions
  1. Bring a large pot of water to a boil. Add spaghetti and cook until al dente, about 8-10 minutes. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Sauté chopped onions and bell peppers for 5-7 minutes until softened.
  3. Add cream of chicken soup, sour cream, garlic powder, onion powder, and milk to the skillet. Stir and cook for 2-3 minutes until warm and smooth.
  4. Mix in cooked chicken and 1/2 cup shredded Monterey Jack cheese. Heat until cheese melts, about 2-3 minutes.
  5. Toss drained spaghetti into creamy chicken mixture. Mix gently to coat all noodles with the sauce.
  6. Optional: Preheat oven to 350°F. Transfer mixture to a greased baking dish, top with remaining Monterey Jack cheese and cheddar, and bake for 20-25 minutes.
  7. Let it cool for a couple of minutes, garnish with fresh parsley, and serve warm.
