  • 2 cups Shredded Cooked Chicken rotisserie chicken can be used
  • 1 can Black Beans drained and rinsed
  • 1 cup Sweet Corn can substitute with diced bell peppers
  • 1 cup Salsa choose spice level to taste
  • 8 oz Cream Cheese softened
  • 2 cups Shredded Cheese (Cheddar/Mexican blend) reserve half for topping
  • 1 teaspoon Cumin
  • 1 teaspoon Chili Powder
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • to taste Salt
  • to taste Black Pepper
Optional Toppings
  • 1 cup Diced Avocado
  • 1 cup Chopped Tomatoes sprinkle just before serving
  • 1 cup Sour Cream
  • 1/4 cup Fresh Cilantro chopped

Preparation Steps
  1. Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish.
  2. In a large mixing bowl, combine softened cream cheese with salsa until smooth, then add cumin, chili powder, garlic powder, and onion powder.
  3. Fold in cooked rice, shredded chicken, black beans, sweet corn, and one cup of shredded cheese until well combined.
  4. Spread the mixture evenly into the greased baking dish and sprinkle remaining shredded cheese on top.
  5. Bake uncovered for 20-25 minutes until bubbling and cheese is golden.
  6. Let the casserole rest for about 5 minutes before serving.
  7. Garnish with optional toppings like diced avocado, chopped tomatoes, sour cream, or fresh cilantro just before serving.
