Method
 

Step-by-Step Instructions
  1. Bring a large pot of salted water to a rapid boil. Add the elbow macaroni and cook until al dente, about 8-10 minutes. Drain and set aside.
  2. In a medium saucepan, melt the butter over medium heat. Add the flour and whisk for 1-2 minutes until bubbly and golden, creating a roux.
  3. Gradually add the milk and cream while whisking continuously. Stir for 5-7 minutes until the sauce thickens.
  4. Lower heat and stir in the cheddar and mozzarella cheese until melted. Season with salt, pepper, and paprika.
  5. Fold the cooked macaroni into the cheese sauce until well coated.
  6. Preheat the oven to 375°F. Transfer to a baking dish, top with breadcrumbs and additional cheese if desired. Bake for 15-20 minutes until golden.
