  • 8 ounces Cream cheese Softened
  • 1 cup Shredded mozzarella cheese Can substitute with cheddar
  • 1/4 cup Parmesan cheese Optional
For Optional Toppings
  • 1/2 cup Breadcrumbs or crushed crackers For crunch
  • Fresh herbs (like thyme or dill) For garnish

Method
 

Step-by-Step Instructions
  1. Cut chicken breasts into 1-inch cubes and season with half the salt and black pepper.
  2. Heat olive oil in skillet over medium-high heat. Add chicken cubes and sear for 3-4 minutes until golden brown.
  3. Lower heat and add minced garlic, sauté for 1 minute. Then, add spinach and cook until wilted (3-5 minutes).
  4. Add softened cream cheese, stirring until melted and creamy.
  5. Return chicken to skillet, add Italian seasoning, remaining salt and pepper, and half of mozzarella cheese.
  6. Preheat oven to 375°F. Spread mixture in skillet or in a baking dish. Top with remaining mozzarella cheese.
  7. Bake for 20-25 minutes until bubbly and golden brown.
  8. Allow to rest for 5-10 minutes before serving.
