- Cut chicken breasts into 1-inch cubes and season with half the salt and black pepper.
- Heat olive oil in skillet over medium-high heat. Add chicken cubes and sear for 3-4 minutes until golden brown.
- Lower heat and add minced garlic, sauté for 1 minute. Then, add spinach and cook until wilted (3-5 minutes).
- Add softened cream cheese, stirring until melted and creamy.
- Return chicken to skillet, add Italian seasoning, remaining salt and pepper, and half of mozzarella cheese.
- Preheat oven to 375°F. Spread mixture in skillet or in a baking dish. Top with remaining mozzarella cheese.
- Bake for 20-25 minutes until bubbly and golden brown.
- Allow to rest for 5-10 minutes before serving.
