  • 2 tablespoons Olive Oil for sautéing
  • 4 cups Vegetable Broth/Water adjust for desired consistency

Step-by-Step Instructions
  1. Prep Vegetables: Peel and dice sweet potatoes, chop the onion and bell peppers, and mince the garlic.
  2. Sauté Vegetables: In a skillet with olive oil, cook onions for 5 minutes, then add garlic and bell peppers for 3 more minutes. Stir in spices and toast for 1 minute.
  3. Combine & Cook: Transfer the sautéed vegetables to the crockpot, add remaining ingredients, and stir well to combine.
  4. Set Crockpot: Cover and cook on Low for 6-8 hours or High for 3-4 hours.
  5. Adjust Seasoning: After cooking, taste and adjust the seasoning with salt, pepper, or extra spices as needed.
