Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet with parchment paper.
  2. Set out three shallow bowls: one with flour, one with beaten eggs, and one with shredded coconut and spices.
  3. Pat the chicken breasts dry and slice them if desired for quicker cooking.
  4. Dredge each chicken piece in flour, then in eggs, and finally press into the coconut mixture.
  5. Heat about a quarter inch of coconut oil in a skillet over medium heat.
  6. Fry the coated chicken for 3-4 minutes on each side until golden brown.
  7. Transfer the chicken pieces to the prepared baking sheet and drizzle with honey.
  8. Bake in the preheated oven for 10-12 minutes until internal temperature reaches 165°F (74°C).
  9. Let the chicken rest for a few minutes before serving.
