Ingredients

For the Roll-Ups
  • 6 slices White Sandwich Bread Use fresh, soft bread for better rolling.
  • 3 tablespoons Butter Melted; can substitute with margarine.
  • 3 tablespoons Brown Sugar Can replace with coconut sugar.
  • 2 tablespoons + ½ teaspoon Ground Cinnamon Use fresh for maximum flavor.
For the Egg Mixture
  • 3 large Eggs Medium or large eggs for consistency.
  • 1 tablespoon Milk Almond or soy milk are great alternatives.
  • ½ teaspoon Vanilla Extract Optional but recommended.
For Frying
  • 2-3 tablespoons Butter Opt for unsalted.

Equipment

  • non-stick skillet
  • Rolling Pin
  • shallow bowl

Method

Step-by-Step Instructions
  1. Begin by removing the crusts from each slice of white sandwich bread. Flatten each slice to about ¼ inch thick using a rolling pin.
  2. In a small bowl, combine the melted butter, brown sugar, and ground cinnamon until well-blended. Spread evenly onto each flattened bread slice.
  3. Carefully roll each slice of bread tightly from one end to the other, sealing the edges gently.
  4. In a shallow bowl, whisk together the eggs, milk, extra cinnamon, and vanilla extract until smooth.
  5. Preheat a non-stick skillet over medium heat and add 2-3 tablespoons of butter, allowing it to melt evenly.
  6. Dip each roll-up gently in the egg mixture, then place seam side down in the skillet. Cook until golden brown on all sides.
  7. Remove from the skillet and place on a serving plate. Serve with your favorite toppings.
