  • 3 medium Potatoes russet or Yukon gold, sliced
  • 1 cup Cheddar Cheese or mozzarella/cheese blend
  • 2 tablespoons Olive Oil for sautéing
  • 1 tablespoon Butter optional
  • 1 medium Onion chopped
  • 3 cloves Garlic minced
For the Veggies and Seasoning
  • 1 medium Romano Peppers chopped
  • 2 tablespoons Tomato Paste
  • to taste Spices (Salt, Chili Flakes, Black Pepper, Paprika, Italian Seasoning) adjust as needed
  • 1 cup Chicken Broth or vegetable broth
For Garnish
  • 1/4 cup Parsley chopped

Step-by-Step Instructions
  1. Prep ingredients: Peel and slice the potatoes, chop onion, parsley, and Romano peppers, and mince garlic.
  2. Sauté potatoes: Heat olive oil and butter in skillet, add potato slices, and cook for about 6 minutes until golden brown.
  3. Cook peppers: Sauté chopped Romano peppers in the same skillet for about 3 minutes.
  4. Brown the beef: Add ground beef to the skillet, break apart, and sauté until slightly browned.
  5. Add garlic and onion: Mix in minced garlic and chopped onion, cooking until onion is translucent.
  6. Stir in spices: Add tomato paste, salt, chili flakes, black pepper, paprika, and Italian seasoning, cooking for another minute.
  7. Combine ingredients: Fold in crispy potatoes, pour in chicken broth, and sprinkle parsley. Cover and simmer for about 10 minutes.
  8. Melt the cheese: Remove the lid, add shredded cheddar cheese on top, cover until melted.
  9. Garnish and serve: Top with remaining parsley and serve hot.
