- Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.
- In a large skillet, brown the ground beef for about 5-7 minutes, then drain excess fat.
- Sauté the diced onion and minced garlic in the skillet for 2-3 minutes until translucent.
- Stir in tomato sauce, diced tomatoes, Italian seasoning, salt, and pepper. Simmer for 5 minutes.
- Cook the elbow macaroni according to package instructions, usually about 7-9 minutes, then drain.
- In a large mixing bowl, combine macaroni, beef mixture, cheddar cheese, mozzarella cheese, and sour cream. Mix well.
- Pour half of the mixture into the baking dish, sprinkle half of the remaining cheddar and mozzarella on top.
- Layer the remaining mixture on top and sprinkle with the rest of the cheese.
- Cover with foil and bake for 20 minutes. Remove foil and bake for an additional 10-15 minutes.
- Let cool for 5 minutes before serving.
