- Begin by thoroughly washing the baby potatoes under cool running water to remove any dirt.
- In a large pot, bring salted water to a rolling boil over high heat.
- Carefully add the prepared baby potatoes and reduce the heat to medium. Boil for about 15-20 minutes until fork-tender.
- Carefully drain the potatoes in a colander and allow them to steam for a minute to remove excess moisture.
- In a large mixing bowl, transfer the hot, drained potatoes and add melted butter and chopped parsley. Gently toss to coat.
