- Preheat your oven to 500°F (260°C) to achieve a perfect crispy crust.
- Prepare the toppings: Dice the red onion, halve the tomatoes, and drain the artichoke hearts.
- Brush both sides of the flatbreads with olive oil and spread a layer of spinach pesto on top.
- Layer mozzarella cheese, then add artichoke hearts, olives, red onion, and tomatoes. Crumble feta cheese on top.
- Bake for 5-10 minutes until cheese is bubbling and edges are golden. Check after 5 minutes.
- Remove from oven, cool for 1 minute, then top with parsley and arugula. Optionally drizzle more olive oil.
