- Bring a large pot of salted water to a rolling boil. Add 8 ounces of pasta and cook until al dente, about 8 to 10 minutes.
- Once the pasta reaches doneness, carefully drain it in a colander, reserving about 1/2 cup of the cooking water.
- In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Season chicken breasts with salt and pepper, then cook for about 6 to 7 minutes until golden brown.
- In the same skillet, add minced garlic and sauté for about 30 seconds. If using cherry tomatoes, add them now and sauté for another 2 to 3 minutes.
- Return the cooked chicken, slice it, and add the reserved pasta and 1/2 cup of basil pesto. Toss to combine, adjusting with reserved pasta water as needed.
- Remove from heat and top with 1/4 cup of grated Parmesan cheese, tossing gently to distribute before serving with fresh basil.
