- In a mixing bowl, whisk together olive oil, lemon zest, lemon juice, minced garlic, dried oregano, thyme, salt, and black pepper. Add the boneless, skinless chicken pieces to the marinade, coating them thoroughly. Cover the bowl and let the chicken marinate in the refrigerator for at least 30 minutes to deepen the flavors.
- While the chicken marinates, take a baking dish and combine the rinsed rice, chicken broth, diced red onion, and chopped bell pepper. Stir the mixture well to evenly distribute the ingredients.
