  • 1 cup Rice (rinsed) Long-grain varieties like basmati are best.
  • 2 cups Chicken Broth Vegetable broth for a vegetarian option.
  • 1 each Red Onion, Diced Yellow onion can be used as a substitute.
  • 1 each Bell Pepper, Chopped Any bell pepper color can be used.
For the Finishing Touches
  • 1/2 cup Kalamata Olives Green olives can be a substitute.
  • 1/2 cup Feta Cheese Crumbled goat cheese can be used as well.
  • 1/4 cup Fresh Parsley Optional for garnishing.

Method
 

Step-by-Step Instructions
  1. In a mixing bowl, whisk together olive oil, lemon zest, lemon juice, minced garlic, dried oregano, thyme, salt, and black pepper. Add the boneless, skinless chicken pieces to the marinade, coating them thoroughly. Cover the bowl and let the chicken marinate in the refrigerator for at least 30 minutes to deepen the flavors.
  2. While the chicken marinates, take a baking dish and combine the rinsed rice, chicken broth, diced red onion, and chopped bell pepper. Stir the mixture well to evenly distribute the ingredients.
  3. Once the chicken has marinated, arrange the pieces over the rice mixture in the baking dish. Tightly cover with aluminum foil.
  4. Preheat your air fryer to 350°F (175°C). Place the covered baking dish in the air fryer and cook for 30 minutes.
  5. After 30 minutes, remove the foil and gently stir the rice. Continue air frying uncovered for another 8-10 minutes.
  6. Top the dish with kalamata olives and crumbled feta cheese, let it sit for 5 minutes to meld the flavors. Garnish with fresh parsley and lemon wedges before serving.
